- 1 tbsp jerk paste
- 100g (3 1/2oz) easy cook rice
- knob of butter
- 1/2 bunch spring onions, chopped on the diagonal
- 1 lime, 1/2 zested and juiced, 1/2 cut into wedges

- ¼ small red cabbage, shredded
- 1 small carrot, grated
- ¼ cucumber, halved lengthways, seeded and thinly sliced
- 2 tbsp rice wine vinegar
- Rub the pork chops with the jerk paste. Set aside to marinate while you prepare the slaw. For the slaw, put the red cabbage, carrot, cucumber and vinegar in a bowl. Season well, then toss to combine.
- Preheat a griddle pan to medium. Cook the pork chops for 4-6 minutes on each side, until cooked through. Meanwhile, cook the rice following the packet instructions, then drain and set aside.
- Put the empty rice pan back on the heat and melt the butter. Stir in the spring onions and cook for 1-2 minutes, until softened. Return the rice to the pan and stir in the lime zest and juice. Serve the rice with the pork chops, slaw and lime wedges for squeezing over.

- 200 g Sea Salt Good Quality
- 1 tbsp Pink Peppercorns Good Quality

- 2 Bay Leaves Fresh
- 2 Thyme Sprigs Fresh
- STEP 1Place all the brining ingredients into a large saucepan with 1 litre of water and bring to the boil. Remove from the heat and leave to cool completely. Once cooled, put the chops in the brine, cover them with cling film and leave in the fridge for 2 hours. Then, remove the chops from the brine, rinse under a cold tap and pat dry with kitchen paper.
- STEP 2Heat oven to 200C/180C fan/gas 6. Heat a large griddle pan over a high heat and fry the pork chops for 3-4 mins each side or until they begin to char – you may need to do this in 2 batches. Transfer to a baking tray lined with foil and roast for 10-12 mins until cooked through.
