Spicy Chicken Kebabs – Fresh 1 Franks Buffalo Kebabs
Ingredients
- 3 garlic cloves , roughly chopped
- knob of fresh ginger , roughly chopped, plus extra to serve
- 1 orange , grated zest and juice
- 3 spring onions , roughly chopped
- 2 tbsp clear honey
- 1 tbsp light soy sauce
- 2 tbsp vegetable oil
- 4small skinless boneless chicken breast fillets , cut into cubes
- 20 button mushrooms
- 20 cherry tomatoes
- 2large red peppers , seeded and each cut into 10
Method
- STEP 1 Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
- STEP 2 Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.
Ingredients
- 6 chicken breasts, chopped into large chunks
- 2 each red, orange and green peppers , deseeded and chopped into large chunks
- warmed flatbreads , chopped
- tomato and lemon wedges, to serve
For the marinade and sauce
- 2 garlic cloves , finely grated
- 300g natural or Greek yogurt
- 1 tbsp paprika
- 3 tbsp ketchup
Method
- STEP 1 Make the marinade by mixing all of the ingredients together in a large bowl. Spoon a third of the mixture into a smaller bowl, then cover and chill until needed. Stir the chicken into the marinade and set aside for 20 mins. Can be chilled for up to two days, covered.
- STEP 2 If using wooden skewers, soak them in water for 1 hr before using. Alternately thread the peppers and chicken onto the skewers until you have 6-8 kebabs. You can do this in advance if you like, and chill the kebabs until needed.
- STEP 3 Heat a barbecue to medium, or until a thin layer of coals has turned grey. Cook the kebabs for 10 mins, turning occasionally, until the chicken is charred and cooked through. Serve the kebabs with the reserved yogurt sauce, warmed flatbreads, chopped tomatoes and lemon wedges on the side.

Ingredients
- 1 Ea Metal / Bamboo Skewers Use Metal as Flame Grill
- 1 125g Chicken Breast Cut into 5 x 25g
- 1 50g Buffalo Sauce Marinade Chicken
- 1 Red Pepper Cut into 2" Square
- 1 Green Pepper Cut into 2" Square
- 1 Spanish Onion Cut into 2" Square
- 1 30g Ranch Dressing Use to Drizzle over Buffalo Kebab
Instructions
- PREP THE SKEWERS AND GRILL. When using bamboo skewers, soak them in water for 2 hours prior to adding your veggies (metal skewers are ready to go when you are). Preheat your grill to medium-high heat (425-450 degrees F).
- ASSEMBLE THE KABABS. Slice all your veggies into 2-inch pieces. Alternating adding the chicken, peppers, and onions to your skewers, and season with the chicken seasoning or sweet rub.
- GRILL! Place the skewers directly on the grill grates of your preheated grill, and cook them for 6-8 minutes per side, flipping only once.
- MAKE THE BUFFALO SAUCE. Combine the Buffalo sauce and butter on the stove top over medium heat until thoroughly combined. Baste the kebabs freely with the sauce and cook for a few more minutes until your chicken reaches an internal temperature of 165 degrees F. A great way to make sure your chicken is cooked all the way through is to use a good thermometer!
- SERVE HOT. Remove the buffalo chicken skewers from the grill and serve hot with a side of ranch dressing for the ultimate meal.
